Pork : Pork Chops with Apples and Bourbon
- 4 boneless pork loin chops, cut 1 inch thick and trimmed of fat
- 1 clove garlic, halved lengthwise
- Pinch of sage
- 2 tablespoons unsalted butter or margarine
- 1/4 teaspoon Original TABASCO® brand Pepper Sauce
- 1 teaspoon fresh lemon juice
- 1/2 cup chopped onion
- 1 medium apple, preferably Granny Smith, peeled and diced
- 1/3 cup Bourbon or apple cider
Pat pork chops dry and rub on both sides with cut sides of garlic; sprinkle with sage.
In a large skillet over medium-high heat, combine butter and TABASCO® Sauce and heat until mixture sizzles. Add pork chops and sauté 12 to 14 minutes, turning once, or until chops are golden brown on both sides and cooked through. Remove from pan, sprinkle with lemon juice and keep warm.
Add onion to skillet and sauté over medium heat for 1 minute. Stir in apple and sauté 1 minute longer. Add bourbon and cook, stirring, 1 minute. Spoon onion, apple and bourbon sauce over pork chops and serve.
Makes 4 servings.
